Local Gimbap Shops Shrinking as Ingredient and Labor Costs Rise

Rising food and labor costs are squeezing neighborhood gimbap (rice-and-seaweed roll) shops across South Korea. Average price for one gimbap roll in Seoul approached 4,000 won—up 6.8% year-on-year—driven by higher prices for rice (+13.2%), eggs (+9%), dried gim (seaweed) and other ingredients. Minimum wage increases and time-consuming preparation add labor pressure, but owners hesitate to pass on full costs because customers face cheaper meal alternatives like convenience stores. The number of small snack-and-light-meal shops (bunsikjeom) has fallen for over two years, with national operators and franchises also shrinking. Higher food costs are increasing household meal expenses, hitting lower-income families hardest and raising concerns about growing debt burdens amid rising interest rates.
