Samsung Medical Center developed a recovery recipe to help esophageal cancer surgery survivors who struggle with swallowing, early fullness, and reflux after reconstruction of the digestive tract. Because the replaced organ lacks the esophagus’s peristalsis and has less storage capacity, patients often eat slowly, in small frequent meals, yet still risk malnutrition and significant weight loss that can slow recovery and reduce long-term survival. To address this, Samsung Medical Center and Samsung Welstory created a nutrition intervention program and published a cookbook of practical healing menus. A recommended dish is a soft crab meat soup made with crab meat, egg, carrot, peas, ginger, garlic, starch, vegetable/kelp stock, and sesame oil. Its warm, smooth texture and balanced protein and vitamins make swallowing easier and support nutrition during recovery. The recipe is simple: sauté garlic, ginger, and carrot in sesame oil, add stock and simmer, then add crab and peas, thicken with starch, stir in beaten egg to form ribbons, season, and garnish.
