The 2025 Pyeongchang Highland Kimjang Festival opened on Nov. 5 at Jinbu Community Sports Park and runs through Nov. 17. The annual festival—now in its 8th year—celebrates local kimchi culture using Pyeongchang’s highland cabbage, Sea of West Coast salt (Seohae salt), and Gangwon’s traditional seasoning recipes. Organizers say this year is special because the county passed a 'Pyeongchang Kimchi Industry Promotion Ordinance' and designated November 11 as 'Kimjang Day,' signaling formal support for the kimchi industry and cultural preservation. Visitors can join hands-on kimjang (communal kimchi-making) experiences—options include standard and premium packages using deep-sea salt–brined cabbage—and taste local dishes like 100% Pyeongchang boiled pork and traditional mandu soup made with Daegwallyeong beef broth. The festival aims to boost tourism and local agricultural sales; last year it recorded 2.1 billion KRW in revenue.
