This Wednesday marks 'Jungbok', the second of the three 'Boknal' days, traditionally the hottest days of summer in South Korea. A main dish enjoyed to combat the heat is 'Samgyetang', a ginseng chicken soup, believed to restore energy according to traditional wisdom by making the body sweat and cool off as a result. Although rich in essential nutrients, 'Samgyetang' can be high in calories, so people with dietary restrictions should consume it carefully. Additionally, cross-contamination and proper handling of raw poultry are important to prevent foodborne illnesses. Similar summer energy-boosting food traditions exist in Japan and China as well.
