Inspired by camellia, Busan's city flower, 'Gidarim' emphasizes patience over speed, taking at least 240 hours to brew its makgeolli, a traditional Korean rice wine. Daily production is limited to 1,000 bottles without additives. Jo, who trained internationally, returned to Busan to create makgeolli that encapsulates local culture and artistry. The brewery's makgeolli has captured attention globally, beginning exports to Japan and the US.
