In the district of Haebangchon, Seoul, artist and brewer Yoon Nara has been crafting Makgeolli (traditional Korean rice wine) with seasonal ingredients like strawberries, pine needles, and lotus leaves. Her brewery, 'Yoonju Dang', emphasizes using traditional methods without modern yeast, allowing the natural yeast from the local environment to provide unique flavors. Recently, Yoon published a book discussing various Makgeolli recipes and promotes traditional alcohol as a pairing for Korean fine dining. The use of diverse ingredients is deeply rooted in Korea's traditional culture. However, existing laws limit creativity in traditional brewing, and Yoon hopes for legal reforms. Her mission includes changing the perception that Makgeolli is a cheap drink. Yoon conducts brewing classes and demonstrations globally to spread awareness of Korea's rich traditional alcohol culture.
