In Korea, different corn varieties offer distinct flavors and textures. Chalok corn, a native Korean variety, is chewy and nutty, similar to glutinous rice, whereas Chodang corn is exceptionally sweet, with a sugar content higher than strawberries. Chalok corn is more traditional and domestically grown, while Chodang corn is mostly imported from the U.S. due to climate challenges in Korea. Both corn types have specific seasons: Chodang corn is usually harvested from May, while Chalok corn is ready by mid-summer. Efforts are underway in Korea to develop and adapt new Chodang corn varieties locally.
