A recent study by Gyeonggi Province Health and Environment Research Institute analyzed 71 soybean-based food products and found that the traditional Korean fermented food 'Cheonggukjang' (a type of soybean paste) contains the highest percentage of non-glycoside isoflavones, which are more readily absorbed by the body. Isoflavones are known to help in preventing cardiovascular diseases, osteoporosis, and reducing the risk of breast and prostate cancer. The study highlights that while dried soybean products have higher isoflavone content, Cheonggukjang's fermentation process naturally converts isoflavones into a form that is more easily absorbed, making it particularly beneficial for health.
