Shin Sang-mok, a former diplomat, turned his life around after narrowly escaping a terrorist attack in Pakistan. Inspired to follow his passions, he opened a Japanese udon shop in Seoul called 'Giriyama Headquarters' in 2012, and it has thrived in the competitive Gangnam area. Recently, Shin launched 'Soul Noodles,' showcasing Korean noodle dishes with a unique twist, such as the signature 'Gomtang Noodles,' using beef broth and a special 1.4mm noodle thickness. Shin aims to globalize Korean noodles ('K-Noodles') by combining traditional Korean flavors with his mastery in noodle-making. His journey reflects the fusion of Korean culinary identity and innovative techniques.
