Chef Jang Ho-jun, owner of Negi Live, draws inspiration from the bountiful seafood of his hometown, Tongyeong, known for its diverse culinary influences from Gyeongsang-do and Jeolla-do regions in South Korea. Tongyeong is famous for fresh seasonal seafood like oysters and sea squirts, enriched by international exchanges, resulting in a unique taste called 'Gemi,' symbolizing the lingering and essential flavor in the local cuisine. At Negi Live in Seoul's Seongsu-dong, Jang focuses on crustaceans like crabs, offering a multi-sensory dining experience where guests can witness the preparation of dishes like 'Grapefruit and Blood Cockle Sumiso Salad' and 'Grilled King Crab with Beurre Blanc Sauce.' Committed to showcasing 'Gemi' in his dishes, Jang continues to explore new culinary endeavors, including plans for a seafood restaurant at Tongyeong's coast.
