Kimchi Color Additives Banned by International Food Standards Committee

At the 55th CODEX Committee on Food Additives meeting, it was decided not to allow the use of color additives in kimchi, aligning with the South Korean government's stance. Traditionally, kimchi's spicy and red characteristics are achieved naturally using red pepper powder. The decision helps preserve the authentic qualities of Korean kimchi. Additionally, standards for food additives in gochujang (Korean fermented red chili paste) were established. CODEX, jointly run by FAO and WHO, aims to promote international food trade and consumer health protection by setting global food standards. These standards, although not legally binding, serve as important international guidelines.
