Australian researchers studied 15 healthy adults who ate either regular white bread or spinach-enriched bread after an overnight fast in a blinded crossover design. Spinach bread contained more fiber (28% higher) and greater levels of folate, calcium, iron and potassium. While post-meal blood glucose was similar for both breads, the peak insulin level occurred about 30 minutes later after eating spinach bread, and participants reported less hunger three hours after that meal. Researchers suggest spinach may affect gut–brain appetite signaling (장-뇌 축) and hormones like GLP-1, but the small sample size means larger studies are needed to confirm long-term benefits for blood sugar control or diabetes prevention. Related lab research from Italy found pasta made with 12.5–25% dried spinach powder had higher fiber, B vitamins and minerals and a lower predicted glycemic index, indicating slower starch breakdown; however, these were in vitro measurements and require human trials to validate.
