Vegan Bakery-Dining in Seoul: DMZ White Wheat Croissants and Umami Pad Thai

In Seoul’s Seogyo-dong, vegan bakery-dining spot UALT features freshly baked goods and hearty plant-based dishes without using any animal ingredients. Run by a French-trained baker and a Thai royal culinary school–educated chef, the cafe bakes bread with DMZ baekgang wheat (a local wheat variety) for flaky croissants made with vegan butter and fermented soy milk. Seasonal fig croissants are also popular. Their pad thai achieves deep umami without oyster or fish sauce by using dried tofu, tempeh made from domestic soybeans, and jackfruit blended into aged traditional Korean soy sauce. Mushroom hummus uses local Jangdan beans and grilled mushrooms topped with chimichurri for a filling, comforting meal. UALT emphasizes sustainability with vintage tableware and local drinks, aiming to make veganism approachable and delicious.
