French wine region Chablis, located in the northernmost part of Burgundy, only produces white wines made from the Chardonnay grape. This region's unique Kimmeridgian soil, which contains oyster fossils, gives the wine its distinct mineral-rich flavor and acidity, pairing perfectly with oysters. The Bourgogne Wine Board is promoting lesser-known Burgundy regions in South Korea through its 'Take a Closer Look' campaign over three years. Chablis is also divided into left and right banks, each with unique characteristics, similar to Bordeaux's division by the Gironde River. The Domaine d'Henri and La Manufacture Benjamin Laroche are notable wineries producing exceptional Chablis wines. The climate in Chablis poses challenges, with spring frosts being a major concern, but it benefits from a modified maritime climate that supports the unique taste of its wines.
