Chef Choi Chang-oh, originally aspiring to be a PE teacher, found his calling in cooking after helping at his uncle's Japanese restaurant. Graduating from Hattori Culinary School in Japan and working at Roppongi Hyatt, he returned to Korea to blend Korean and Japanese culinary styles in seasonal course menus at his restaurant, Dduthanbar. Known for his attention to Korean noodles and soups, his signature dishes include Korean-style Soybean Cold Noodles featuring jangdan beans and Seo-cheon's Blue Crab Soup with a soybean broth. Emphasizing nostalgia in Korean cuisine, he aims to revive disappearing local dishes, inspired by childhood meals.
