Summer Health Foods Can Spike Blood Sugar — Eat Carefully

As temperatures rise, popular Korean summer dishes often thought to restore energy can unexpectedly raise blood sugar levels. Wheat-based cold noodles like kongguksu (soy milk noodles) and bibim-guksu can cause rapid glucose spikes because the amylopectin in wheat starch breaks down quickly into glucose. Juicing water-rich fruits such as watermelon, Korean melon (chamoe), or peaches destroys fiber and speeds sugar absorption—eating whole fruit in small portions is preferable. Even traditional restorative dishes like samgyetang (ginseng chicken soup) can be high in calories (close to 1,000 kcal per bowl) and strain blood sugar control if consumed excessively. Foods often labeled “healthy,” such as potatoes, sweet potatoes, and corn, also have high glycemic indices and can raise post-meal glucose. Experts advise focusing on overall eating patterns rather than banning specific foods: combine carbohydrates with protein, vegetables, and fiber, avoid finely mashed or pureed preparations that increase digestibility, and limit sugary beverages to reduce rapid glucose absorption.
