Gochujang (Korean fermented chili paste) is gaining popularity overseas as cooks adapt it to local dishes. TikTok has showcased recipes using gochujang in unexpected ways—mixing it into butter for a savory spread, using it as a pasta sauce, and even combining it with caramel to make cookies. The New York Times highlighted gochujang butter pasta and gochujang caramel cookies among popular reader recipes, and previously featured a summer salad pairing gochujang with peach, cucumber, and mozzarella. Meanwhile, ssamjang (a Korean dipping sauce) is also being reinvented: people are using it as a cooking or BBQ sauce and increasingly making homemade versions from doenjang (fermented soybean paste) and gochujang rather than buying ready-made products.
