Peeled or cut potatoes can turn gray or pink due to oxidation when exposed to air. To prevent discoloration, fully submerge them in cold water and refrigerate — use a large bowl for short storage or a sealed container filled with water for up to about 24 hours. Make sure no potato parts stick out above the water, and cook within 24 hours for best quality. Soaking also removes some starch, which restaurants use to make crispier fries and hashbrowns or fluffier mashed potatoes. Cloudy water is normal from released starch; discard the potatoes if they smell bad or feel slimy.
