Why Do Some Cucumbers Taste Bitter? The Role of Cucurbitacin

Summer cucumbers are over 95% water and refreshing, but sometimes they taste unexpectedly bitter. The bitterness usually comes from a natural defense compound called cucurbitacin, found in cucurbit family plants. While many commercial cucumber varieties are bred for low bitterness, stress during growth—like high heat, drought, rapid temperature changes, or water shortage—can increase cucurbitacin levels. The compound is often concentrated near the stem end and just under the skin. Mild bitterness is generally not harmful, but very bitter cucumbers can cause nausea, stomach pain, or diarrhea and should be discarded. To reduce bitterness: cut off more of the stem end, rub and rinse with coarse salt, peel the skin partially, or use pickling/dressing methods (e.g., salt, vinegar, sugar).
