In South Jeolla Province, humble charcoal (yeontan) pork bulgogi is served with surprisingly lavish side dishes that rival full-course southern-style (namdo) meals. In Gangjin’s Suingwan and nearby eateries, pork bulgogi is bright red from chili powder (not gochujang) and is marinated and aged for days before being grilled over traditional briquettes for a smoky flavor. Suingwan serves the pork with an array of regional banchan including salted small shrimp (tohajeot), dried croaker (gulbi), and fermented skate (hongeo), often presented in local celadon pottery. In Haenam’s Daejeong Restaurant the dish is a homey, high-value set using gas-searing then charcoal-finishing, with a sweet soy marinade including honey and pear and comforting vegetable banchan. In Yeongam’s Seonil Butcher-restaurant, pricier portions use domestic pork belly and neck, marinated with fruits and aged, and even include complimentary raw Korean beef (hanwoo) as a side — turning an ordinary pork order into a memorable regional feast.
