How to Keep Ginger Fresh in Summer: Avoid Mold in the Fridge

As temperatures rise, ginger is valued for easing summer fatigue—its compounds gingerol (진저롤) and shogaol (쇼가올) help regulate body heat. There are two common types: brown storage ginger (근생강) and newly harvested young ginger (햇생강), the latter being lighter, pinkish and more moist. Ginger often dries out or molds in the refrigerator, especially if left in a plastic bag. To prevent drying, wrap in plastic wrap or newspaper and keep in a cool, dark place, or slice/grate and freeze in portions. Another effective method is to store whole, unpeeled ginger submerged in water in a sealed container in the fridge—this can keep it fresh for about a month if you change the water and clean the container weekly. Young ginger can be stored the same way but should be used sooner due to higher moisture. The USDA advises protecting moist, aromatic root vegetables from excessive drying and temperature swings. In summer, use ginger in teas, chilled soups, or stir-fries to make the most of it.
