She advises choosing grapes that are round and well-balanced, as these will have uniform sweetness. Grapes with larger clusters tend to be less sweet, especially at the bottom. Ideal Shine Muscat grapes should weigh about 18g each, with a total cluster weight of about 720g. The grapes should be yellowish-green for the best taste, as this color indicates a balanced sweetness and crisp texture. Checking for firmness and elasticity is also important for determining the ripeness and sweetness of the grapes. Shine Muscat grapes are best when their seeds have been thinned appropriately to enhance the quality and flavor. Green ones are immature, while deep yellow ones are overripe, losing the unique crispness and deep flavor characteristic of Shine Muscat.
