These tomatoes are rich in glutamic acid, a component that enhances the umami effect in foods, much like tomatoes in Western dishes versus seaweed in Korean cuisine. Exclusive to a specific region, Daejeo Tomatoes have gained a market premium due to their rich environment near the Nakdong River and advanced cultivation techniques. Though limited to a three-month growing season, they have spurred interest among young farmers, doubling sales within seven years. These tomatoes present a uniquely Korean flavor experience available only from February to May each year.
