A common white string next to the yolk is the chalaza (al-geun), not fat or cholesterol. It anchors the yolk and is rich in high-quality protein, lysozyme (an antibacterial enzyme), and sialic acid, which may help block viruses and reduce inflammation. The chalaza is safe and can be eaten. Eggshells, often discarded, are about 93% calcium; powdered shells given with vitamin D and magnesium improved bone mineral density in osteoporosis patients. Eggshell membranes and crushed shells also have cosmetic uses—membranes can moisturize dry skin and crushed shells mixed with egg white can act as a gentle exfoliant.
