Jecheon Standardizes Flavor for Spicy-Sweet Red Fish Cake Ahead of Festival

Jecheon City in North Chungcheong Province is moving to standardize the flavor of its popular spicy-sweet red fish cake (red odeng) ahead of the 2nd Jecheon Red Odeng Festival, opening Feb. 28. Officials held a taste-improvement review where vendors shared recipes and cooking techniques to reduce last year’s menu inconsistencies. The festival will run from Feb. 28 to Mar. 2 at Jecheon Station Plaza. City authorities said standardizing taste aims to raise the festival’s quality and ensure visitors and residents enjoy a consistent winter street-food experience.
