Samhae Soju is a traditional Seoul spirit rooted in the city’s historical brewing neighborhoods. Originating from samhaeju (a clear rice liquor named for being brewed on three pig-days of the lunar calendar), the drink historically required abundant rice, time and clay vessels, making it a luxury enjoyed by royalty and elites. Today, ㈜Samhae Soju in Mapo produces a distilled version (about 45% ABV) following traditional methods: multiple staged additions of steamed rice and nuruk (fermentation starter), single-pot (alembic) distillation, and months of natural aging. The company runs an academy and tasting events where visitors can sample 17 varieties, from rice- and grape-based samhae styles to the powerful double-distilled “Samhae Gwiju” (71.2% ABV). Production remains small (max ~5,000 bottles/year) to preserve craftsmanship. Recommended pairings include plain beef or rich, oily dishes; the producer emphasizes enjoying the spirit neat, much like whiskey.
