Freezing Bread May Cut Blood Sugar Spike by Around 40%

Researchers report that freezing white bread and then thawing (or toasting after thawing) increases its resistant starch, which slows digestion and can reduce post-meal blood sugar rise by about 31–39%. The heat during baking gelatinizes starch, and freezing causes some of that starch to recrystallize into resistant starch that resists digestive enzymes, delaying glucose absorption and prolonging fullness. Studies (e.g., Oxford Brookes University, 2008) found thawed-and-toasted bread produced the largest reduction in glucose response. However, experts warn frozen bread is not a “diet food”: calories remain the same, so portion control and choosing whole-grain breads (통곡물빵) with more fiber are still recommended. Freezing also preserves texture better than refrigeration; letting thaw at room temperature for 1–2 hours or reheating in an oven/air fryer restores freshness.
