A small U.S. study compared two plant-forward diets for adults aged 65+: one including minimally processed lean pork as the main protein source and the other based on legumes (chickpeas, lentils, peas, black beans). Both diets followed USDA guidelines and emphasized fruits, vegetables, and grains. Over eight weeks, participants in both groups showed improved insulin sensitivity, lower cholesterol, and weight loss. The pork group tended to preserve muscle mass better and maintained HDL (“good cholesterol”) more than the legume group.
