From Delivery Boy to 'Tiffinbox Chef': Lim Tae-hoon Keeps His Restaurant's Standards

Lim Tae-hoon, known as the 'tiffinbox (cheolgabang) chef' from Netflix's Black & White Chefs, rose from teenage delivery work and dishwashing to running his own acclaimed Chinese restaurant, Doryang. Without formal culinary schooling, he learned knife skills and wok control by watching and doing, even enduring injuries and long hours. His show entrance line “Anyone ordered jajangmyeon?” became iconic, and despite media attention fading for others, Doryang remains hard to book a year later. Lim credits longevity to having a responsible person always present in the restaurant, consistent taste and service standards, and direct communication with customers. Famous for a pared-down, less oily dongpaju(korean-style braised pork belly) that takes eight hours to prepare, he recently launched jajangmyeon and jjambbong meal kits, focusing on matching in-restaurant taste—using lard in the sauce and careful noodle texture tests. This year he plans to stay devoted to his restaurant while expanding the audience through thoughtfully made kits.
