A new Sinsa-dong restaurant, Uga, specializes in long-aged hanwoo (Korean beef) using carefully controlled microbial fermentation to design flavor and texture. Owner Huh, a 35-year veteran in meat aging, explains that aging breaks large molecules into smaller, tastier ones and that microbial contact is key: dry-aging exposes meat to air microbes, while wet-aging in vacuum minimizes them. Uga trims 2+ grade hanwoo by cut, inoculates it with lactic acid bacteria and koji-like strains used in traditional Korean jang (fermented sauces), and alternates low-temperature and yeast-friendly conditions for at least 60 days. The chef recommends searing first on high heat to caramelize and develop savory, fermented aromas, then finishing on lower heat; even raw-style yukhoe (beef tartare) is briefly seared on the surface to layer flavors. Prices: aged ribeye and tenderloin 58,000 KRW per 100g; yukhoe 35,000 KRW.
