Ca Phe Trung, Vietnam’s famous egg coffee, was invented in 1946 in Hanoi when milk was scarce during French colonial times. Bartender Nguyen Van Giang whipped egg yolks with condensed milk and sugar into a creamy topping poured over strong coffee, creating a layered drink often finished with cinnamon. Served hot or cold, it can be stirred or sipped in layers for different taste experiences. The original “Cafe Giang” remains a popular tourist spot; the drink’s simple method helped it spread quickly and even inspired instant versions. Besides being a tourist favorite, ca phe trung has boosted local egg consumption.
