Pork is the main source of protein and fat, while salt is the largest contributor to sodium, followed by baechu-kimchi (napa cabbage kimchi) and soy sauce. Experts advise focusing not just on total sugar but on glycemic index (GI) and glycemic load (GL); apples have relatively low GI/GL and beneficial fiber and antioxidants, so processed foods and refined carbs that cause blood sugar spikes deserve more caution than whole fruits.
