Paradise Hotel & Resort’s Winter Menus Spotlight Amberjack, Pufferfish and Seasonal Seafood

Paradise Hotel & Resort is offering winter seasonal menus across Paradise City and Paradise Hotel Busan that emphasize peak-flavor seafood and nutritious ingredients. At Paradise City, Japanese dining Raku presents a “Winter Chef Special” course built around monkfish liver mousse and amberjack (buri) aburi sashimi, with winter items like patterned squid and burdock tempura. Italian restaurant La Scala’s “Trip to Alta Italia Part II” includes seasonal amberjack tataki, chestnut tagliolini with aged Parmesan, and seasonal flatfish and kohlrabi. Boutique hotel Art Paradiso’s Korean fine-dining SearaSae runs a winter course through February featuring scallops, abalone, shrimp and king crab cold dishes and barley risotto, developed with Paradise’s Culinary Lab and Michelin 3-star chef Kang Ming-gu. At Paradise Hotel Busan, Japanese Sakae serves pufferfish (fugu) special courses—sashimi, fried parts and skin preparations—through Feb 28, while Chinese restaurant Nampung highlights “golden chives” (hwanggeum buchu), a nutrient-rich chive variety prized for winter immunity. The resort says winter brings out the pure flavors of seasonal ingredients and aims to combine gourmet dining with restorative benefits.
