Why microwaves heat unevenly — and why you should wait

Microwaves heat food by agitating water molecules, not by warming the container or air, so heating is often uneven. Microwaves typically penetrate only about 3–4 cm, so dense, irregularly shaped, dry, or solid parts stay cooler while moist areas heat quickly. After microwaving, heat continues to move from hot spots to cold spots — called resting or standing time — so letting food sit 1–3 minutes (longer for large or dense portions) evens the temperature and improves safety. Stirring or turning food and covering it lightly before waiting speeds heat redistribution. For leftovers, frozen meals, meats, and casseroles, ensure internal temperatures reach about 74°C for safety; use a food thermometer if unsure.
