Chef Im Seong-geun, nicknamed “Ajae Maengsu,” toured Mangwon Market in a Netflix Korea YouTube clip to share practical shopping and cooking tips. He explained how to choose and prepare pork galbi (parkpo-galbi: a cut combining pork belly and meat attached to the rib) and advised asking butchers to slice a 7 mm middle section of samgyeopsal (pork belly) if the rare bone-attached cut is unavailable. He recommended gently thawing frozen pork in the fridge for two days, patting it dry, and splashing a little cheongju (Korean rice wine) before grilling. Other tips included using pork with skin for stews, leaner front leg meat for jjageuli (a thick, braised stew), and smelling and avoiding young shoots with many roots when selecting naengi (shepherd’s purse). He highlighted spinach as a must-eat winter ingredient and suggested soaking it in vinegar water to remove dirt, then seasoning as a quick salad (geotjeori).
