Winter Boost: Beef Tomato Stew and Fresh Oyster Salad

This piece introduces two lighter Korean-style winter restorative dishes that preserve nutrients while boosting appetite. First, a beef tomato stew: cooking tomatoes increases absorption of lycopene (a natural antioxidant linked to cancer and cardiovascular disease prevention). The recipe sautés garlic, beef, potatoes, carrots, celery, and mushrooms in olive oil, adds chopped tomatoes, bay leaves and simmering liquid, then seasons with chicken stock, sugar, and salt (tomato paste optional). Because lycopene is fat-soluble, cooking tomatoes with oil like olive oil improves uptake. Second, a fresh oyster salad (gul chohoe): oysters (called “sea milk”) are rich in zinc, taurine, iron and other minerals that support immunity, liver and prostate health.
