When cleaning out the kitchen, many find foods with unclear expiration dates. Some pantry staples are safe to keep for a long time and make good emergency rations. Pure salt (sodium chloride) has no expiry as long as it stays dry. Pure maple syrup is stable but once opened should be refrigerated and consumed within about a year. Granulated sugar resists microbial growth; packaging often shows two years only because it can clump, not because it spoils. Soy sauce does not strictly need refrigeration, though refrigerating helps preserve its flavor if not finished within a year. Honey can be stored long-term if kept cool and dark; crystallization or cloudiness does not mean it’s bad. Apple cider vinegar is acidic and stable at room temperature. Dried pasta can last about two years if kept cool and dry, discarding it if it becomes musty. Unopened rice can last indefinitely; once opened it keeps well for 1–2 years if sealed and stored cool, and using oxygen absorbers extends shelf life. Dried beans and cornstarch also store long when sealed and kept dry; powdered ingredients should be kept in airtight containers because they absorb odors.
