Seonbi Kalguksu, led by CEO Kang Han-bit, is redefining kalguksu (Korean knife-cut noodle soup) as a comforting, nutritious dish rather than just a quick meal. The restaurant’s signature offerings include anchovy, clam, beef-bone, soy-sauce (jang), perilla, seaweed (maesaengi), kimchi and spicy beef kalguksu, with side dishes like Seonbi dumplings, potato pancake (gamjachaegjeon) and perilla-potato dumplings. Facing franchise interest, Kang developed a franchise model focused on shared growth: standardized recipes, seasoning bases, and streamlined cooking processes that lower startup costs and food waste, enabling consistent quality even for novice operators. Recognized with a 2026 Innovation Leader award, Kang says Seonbi Kalguksu will keep delivering warm, high-quality meals to customers.
