Olive oil, long praised as a source of healthy fats, has seen a roughly 70% increase in sales in Korea from 2019 to 2023, with growing demand for premium options like extra virgin and organic. But experts warn its health benefits depend on proper handling: olive oil is sensitive to light, heat and air, which accelerate oxidation and reduce antioxidants (polyphenols). Avoid storing transparent bottles in sunlight; wrap them in foil or keep them in dark containers. Keep oil at a cool, stable room temperature—refrigeration can solidify it and rapid temperature changes harm quality. Seal bottles tightly after use to limit air exposure. In cooking, use extra virgin olive oil for raw dishes like salads and seasoned vegetables, and choose higher smoke-point oils (e.g., pure olive oil) for frying or high-heat cooking, since heating above about 170°C can destroy nutrients and create harmful compounds. Experts emphasize that how you store and use olive oil matters more than simply choosing it, so proper care preserves its benefits.
