Konjac noodles (곤약면) are almost calorie-free because glucomannan absorbs water and promotes fullness—good for rapid weight loss and blood sugar control but low in nutrients, so pair with protein. Tofu noodles (두부면) are made from soy, high in plant protein and lower in carbs than wheat noodles; they hold up well in stir-fries and suit those combining diet with strength training. Seaweed-based noodles (해조면), made from alginate extracted from kelp or wakame, offer a chewy texture, abundant fiber and minerals that help prevent constipation—check sodium levels on labels.
