Pork gukbap (돼지국밥) is a comforting Korean soul food that warms body and spirit. This quick home version uses ready-made broth cubes called Yeonduring (연두링) to save time: boil water with two cubes, add thinly sliced frozen pork belly, skim impurities, then pour the hot broth over rice and top with sliced green onion and cheongyang chili. For extra flavor, mix a dadowgi (다대기) of seasoning paste—Yeondusun (요리에센스 연두순), gochugaru (red pepper powder), chopped cheongyang chili and garlic—and stir into the soup.
