South Korea’s Ministry of Oceans and Fisheries named maesaengi and freshwater eel as January’s seafood picks. Maesaengi (a thin, tender Korean seaweed) is low in calories, high in dietary fiber, and rich in calcium and magnesium—helpful for digestion, weight control, bone health, and stress relief. A popular winter dish, maesaengi-gulguk (soup with maesaengi and oysters), highlights its deep ocean aroma and savory flavor. Freshwater eel, called baemjangeo (literally “snake eel” for its long, slender shape), is prized as a restorative food rich in vitamins A and E for eye health, skin elasticity, and anti-aging, and potassium for blood pressure support.
