Braised Chicken Drumettes with Whole Garlic: No Rinsing, Roast First

Cooking researcher Lee Jung-woong shares a simple recipe for braised chicken drumettes (dakbong) with whole garlic, perfect as a banchan (side dish) or anju (drinking snack). He advises not to wash the chicken (rinsing can make it smell fishy) and recommends searing the drumettes first to keep the meat chewy and help the sauce penetrate. Ingredients for two: 400g chicken drumettes, 200g whole garlic, 5 kkwari-gochu (korean chili peppers), 1 tsp whole pepper, 5 tbsp oil; sauce: 6 tbsp seasoned soy sauce (mat-ganjang), 3 tbsp maesil syrup (plum syrup), 3 tbsp corn syrup, 2 tbsp mirin (mat-sul), 1/2 cup water. Method: brown the drumettes in oil, add garlic when halfway cooked, add sauce and simmer over medium heat until glossy, then add halved kkwari-gochu and finish. Great for family meals, kids’ lunchboxes, and casual entertaining.
