Keeping Eggs in the Fridge Door Raises Food Poisoning Risk

Experts warn that storing eggs in the refrigerator door can be risky because frequent opening causes temperature fluctuations that encourage Salmonella and other pathogenic bacteria to grow. Eggs lose their natural protective coating when washed and are porous, so stable cold storage is essential. Authorities recommend refrigeration: Korea’s food agency advises 0–10°C, while the U.S. FDA recommends below 4°C; at or under 4°C Salmonella growth is suppressed by over 99%. Eggs should be kept in their original paper carton (종이 상자) on an inner, deep shelf of the fridge where temperature is steadier and odors (e.g., kimchi) are less likely to be absorbed. Studies show eggs held at 4°C had almost no Salmonella growth for 35 days, whereas 10–30°C allowed bacteria to rebound. The door tray exists for convenience, not safety—choose a location that keeps temperature stable and practice hygienic cooking.
