Cooling boiled eggs in cold water can stop residual heat from overcooking them, prevent a greenish ring on the yolk, make peeling easier, and help maintain even shape. However, rapid chilling can cause tiny shell cracks that may shorten refrigerated storage life. The right approach depends on how cooked you want the yolk and whether you’ll eat the eggs immediately or store them. For medium–firm yolks (between soft and hard), boil about 8 minutes then plunge into cold water. For soft-boiled eggs with runny yolks, cook about 6 minutes and serve warm without chilling. To make firm but not dry hard-boiled eggs, start from cold water and simmer 8 minutes or boil then let sit off heat for 8–12 minutes before lightly cooling or leaving to cool naturally. Cold-water chilling is a choice, not a rule—try different methods to find what suits you best.
