Ashley Queens launched 'House of Ashley,' a gallery-style popup in Seoul’s Seongsu-dong that reframes the value buffet chain as an experiential brand rooted in American heritage. The space stages a three-generation family narrative—Gen-Z Ashley (a Parsons student), her journalist mother Evelyn, and grandmother Catherine (a Scottish aristocrat who migrated to New York in 1945)—through rooms filled with quilts, a Kennedy wedding china collection, a first edition of Gone with the Wind and related props. Eland Eats says the exhibition aims to deepen the brand’s identity beyond affordable buffets by combining exhibition, story and food to test new menu and service ideas for a Seongsu prototype and future nationwide rollout. The popup also leverages Seongsu’s trend-forward, experience-focused consumers to refine concepts before implementing them across new stores next year. (Parsons: Parsons School of Design)
