Government Support Turns Plant-based Frozen Gimbap and High-Protein Rice Cakes into Marketable K-Food Products

South Korea’s Food Industry Cluster Institute, backed by the Ministry of Agriculture, showcased commercialization wins from its 2025 technology support program. Projects focused on future foods (plant-based, convenience, eco-packaging), specialty foods (functional, senior-friendly), and export-ready K-foods. Highlights include a plant-based frozen gimbap using Paju soybean vegan meat and eco-friendly heat-resistant trays; retort-format Korean stews converted from frozen to shelf-stable products and localized for Japan leading to export deals; a low-sugar, high-protein chapssaltteok (찹쌀떡) with guar gum hydrolysate registered as a functional food for blood-sugar and cholesterol benefits; and individually quick-frozen (IQF) abalone seaweed rice optimized for U.S. tastes with spicy sauce and shelf-stable options. The institute provides annual technical help to small food firms to solve production issues, gain certifications, improve processes, and enter overseas markets.
