Rice is a staple in Korea, but keeping freshly cooked rice on a rice cooker’s ‘keep warm’ (보온) setting for too long can raise foodborne illness risk. Experts say if a cooker reliably maintains about 60°C (140°F) or higher, rice may be relatively safe in keep-warm mode for up to 12 hours; some cookers’ ‘long keep-warm’ (장시간 보온) functions can extend this to 24 hours but should not be relied on beyond recommended limits. Leaving rice longer increases the chance of bacteria that cause “fried rice syndrome” (볶음밥 증후군), which leads to stomach pain and vomiting. Food safety guidance: turn off keep-warm and refrigerate rice promptly once 12 hours have passed, and follow the general rule to refrigerate cooked foods within 2 hours of cooking or removing from heat. For faster cooling, divide large amounts into shallow containers. The same 2-hour rule applies to fried rice. Observing keep-warm time and refrigeration timing can greatly reduce food poisoning risk.
