South Korea's Ministry of Oceans and Fisheries has chosen king crab (daege-ryu) and cod (daegu) as December’s featured seafood. King crab, named for its long straight legs, is a cold-water species found mainly along the East Sea and is rich in essential amino acids and arginine, which can boost stamina, support liver function, and strengthen immunity. Its sweet, tender meat is often steamed or boiled and the leftover shell with rice, gim (seaweed), and sesame oil makes a popular mixed dish. Cod, a winter staple named for its large mouth, is low-fat, high-protein and low-calorie, making it good for diets; it’s high in potassium and selenium, which may help prevent hypertension and slow aging. Cod is versatile—used in stews, braises, and pancakes—with cod stew (daegutang) prized for warming the appetite and helping hangovers.
