Celebrity chef Edward Lee appeared on The Drew Barrymore Show to demonstrate a Korean twist on a classic Thanksgiving turkey: a gochujang (Korean red chili paste) glaze. He described gochujang as a deeply savory Korean sauce made from red pepper powder, fermented soy, salt, and sugar. Lee’s method: season the turkey with salt and pepper, tuck frozen pats of butter under the breast skin to slow breast cooking, roast at 163°C for about 2 hours, brush with a glaze made from gochujang, apple cider vinegar, sesame oil, lemon juice, and honey (or brown sugar), then increase the oven to 218°C and roast another ~30 minutes until mahogany-brown. Let the turkey rest in residual heat to stabilize the juices. Lee also suggested serving extra glaze as a dipping sauce and hinted at an additional ‘‘secret’’ brown liquid — a bourbon-based touch featured in his cookbook Bourbon Land — noting that cooking with bourbon leaves the aroma while the alcohol cooks off.
